Ingredients
3 servings
27 ozboneless skinless chicken breasts
cut into strips - should cook down to 18 oz
1 Tbspolive oil
3 Healthy Fats
0.75 packagefajita seasoning mix
9 condiments
1 cupdiced tomatoes with green chilies
undrained, 2 Greens
1 cupred bell pepper
cut into strips Greens
1 cupgreen bell pepper
cut into strips Greens
1 ½ cupszucchini
or yellow squash
Instructions
Step 1
In a large bowl, combine chicken strips with olive oil and fajita seasoning mix.
Step 2
Marinade in the fridge for at least 3 hours or more if desired.
Step 3
Add the tomatoes, peppers, zucchini and squash to the chicken mixture until combined.
Step 4
Pour mixture into prepared baking dish.
Step 5
Preheat oven to 400 degrees. Spray a 13×9 baking dish with cooking spray.
Step 6
Bake uncovered for 25 minutes or until chicken is cooked through and the vegetables are tender
