My children loved their great grandmother's "Carrot Bake" when they were young and I updated it for a grown, savory palate.

Instructions
Step 1
1) Boil carrots until tender
Step 2
2) Drain carrots saving the cooking water to use as water in recipe
Step 3
3) Mash or puree carrots well and set aside
Step 4
4) Using a food processer, pulse oats to fine crumbs
Step 5
5) Dissolve bouillon into 1 cup of reserved cooking water (I use BetterThanBouillon and dissolve 1 tsp savory onion and 1 tsp garlic to make the cup of broth. You can use low salt vegetable broth instead and add 1/2 tsp each onion and garlic powders)
Step 6
6) Mix all ingredients and pour into a greased 9"X12" casserole dish
Step 7
7) Bake for approximately one hour at 350°F and let the casserole rest before serving
