Instructions

Step 1
Add the cornmeal, and self-raising flour to a bowl along with the salt, sugar, Chilli powder, and Paprika and mix.
Step 2
Add in the milk and egg and mix well.
Step 3
Add in the shallots and prawns and mix them into the batter.
Step 4
Heat a pan with oil to around 170 degrees.
Step 5
Once the oil is at temperature spoon in the mixture if you have an ice cream scoop use it to create ball shapes.
Step 6
As the ball are frying keep turning them to ensure they are evenly browned.
Step 7
Once cooked Remove from the pan and allow to drain on a wire rack.
Step 8
For the mayo add 150ml of vegetable oil to a jar along with the salt vinegar and the egg.
Step 9
Using a hand blender, blend the ingredients until a smooth mayo is formed.
Step 10
Add in the chilli and garlic and blend again for 1 minute.
Step 11
Add the Hush puppies to a serving dish and transfer some of the mayo into a ramekin.
Step 12
Serve, lick you’re lips and enjoy.
