Tempura Poached Egg
3eggs

1 cupall purpose flour
1 cupwater
cold
3 Tbspcorn starch
½ cuppanko
water
for poaching
oil
for deep frying
Hollandaise Sauce
Pork Belly
Rice Bowl
Instructions
Step 1
Prepare the rice bowl ingredients by chopping shiso leaves, cabbage, and green onions. Set them aside
Hollandaise Sauce
Step 2
Add egg yolks and lemon juice into a heat safe bowl. Whisk until yolks have become slightly pale
Step 3
Bring bowl over a pot of simmering water and whisk until volume has almost doubled
Step 4
Slowly drizzle melted butter while whisking until all butter is used. Take the bowl off of the heat if the egg mixture is getting too hot. Continue whisking until butter and egg yolks have emulsified and thickened enough to coat back of a spoon.

Add soy sauce and yuzu salt to taste
Pork Belly
Step 6
Combine soy sauce, oyster sauce, honey, and msg into a bowl

Pan fry pork belly 3 minutes each side
Step 8
Brush the pork belly with the sauce and flip to coat the other side
Step 9
Continue to coat and flip until pork belly is a dark brown color
Tempura Egg

Bring a pot of water to a simmer

Crack an egg into a small bowl

Create a whirpool in the water with a spoon and gently drop the egg in. Repeat for the other egg

Cook for 60-90 seconds and transfer to a bowl of cold water

Mix tempura batter. Create 3 stations: one for corn starch, one for tempura batter, one for panko bread crumbs

Preheat oil for frying to 400 degrees Fahrenheit

Gently coat the poached eggs in corn starch then tempura batter then panko bread crumbs

Deep fry for 1 minute and drain excess oil
Assembly
Step 18
Combine shio kombu and shiso leaves with white rice in a bowl
Step 19
Add a pile of cabbage
Step 20
Shingle pork belly on top of cabbage
Step 21
Place one tempura egg on top of pork belly
Step 22
Blanket the egg with hollandaise sauce

Top with green onions
