Instructions
Step 1
The potatoes should be peeled and rinsed. Then cut them into sticks by cutting the potato vertically into four or five pieces, then cutting each piece into sticks.
Step 2
Fill a large bowl halfway with cold water and set aside. Allow 2 to 3 hours for them to soak. (Alternatively, put them in the fridge and soak them overnight.)
Step 3
Drain the potatoes and place them on two baking sheets lined with paper towels when you're ready to make the fries. To dry them, blot them with paper towels.
Step 4
In a heavy pot, heat a few inches of oil to 275 degrees F. Cook the potatoes in 3 or 4 batches until soft, about 4 to 5 minutes per batch. At this point, they should not be brown! You simply wish to begin the cooking process. Each batch should be removed and drained on fresh, dry paper towels.
Step 5
Now increase the heat to 350 degrees F. when the oil is hot, return the potatoes to the pan in batches and cook until golden and crisp.
Step 6
Remove the potatoes from the oil and pat them dry with paper towels. Sprinkle with sea salt and enjoy!
