Step 1
Preheat oven at 180°C
Step 2
Chop sundried tomatoes and fry with chickpeas until golden.
Step 3
Chop peppers, courgette, and aubergine and fry with herbs and spices and the chickpeas for 5 minutes.
Step 4
Transfer to casserole dish with chopped tomatoes and put in oven.
Step 5
After 20 minutes, cook the rice with the water.
