Instructions

Step 1
Start by preheating your oven to 350 degrees.
Step 2
Wash all of your produce.
Step 3
Roughly chop your onion and basil, set them aside.
Step 4
Cut the tops off of your garlic knots.
Step 5
Now on an aluminum-lined baking sheet add your tomatoes, garlic, and onions to the sheet.
Step 6
Drizzle what's on the pan in avocado oil.
Step 7
Add salt, black pepper, and oregano to the pan, then mix all together.
Step 8
Put the pan into the preheated oven, and roast the veggies for 35-40 min.
Step 9
While you’re waiting add the veggie stock and basil and put it into the blender.
Step 10
Once the veggies are done in the oven transfer them to the blender and blend on high for about 3-5 minutes
Step 11
Taste and add more salt and pepper if desired.
Step 12
Serve immediately. Serve with and a small dollop of yogurt and an extra crack of pepper (Optional).
