Instructions
Step 1
Brown the sausages in a pan and put them to one side
Step 2
Finely chop red onion, courgette, pepper, tomatoes, garlic and chilli
Step 3
Cook the red onion in a saucepan until it starts to soften, then add the courgette to start to brown, then add the peppers, garlic and chilli. Lastly add the chopped tomatoes and cook for a couple of minutes until all combined. Season to taste.
Step 4
Add the chopped tomatoes into the pan

Add some stock to loosen the sauce
Step 6
Season well. Add balsamic vinegar and a splash of red wine
Step 7
Leave mixture to lightly simmer and allow the sauce to thicken
Step 8
Put the browned sausages back in for 10 mins to finish cooking
Step 9
Add the tin of butter beans for a few minutes
Step 10
Add the cooked potatoes for a few minutes until all is combined
Step 11
Serve and enjoy!
