Ingredients
2 servings
3skinless boneless chicken breasts
cut into cubes
2garlic cloves
crushed
1 Tbspginger
freshly grated
1 tspground cumin
¼ tspchilli powder
½ tspsmoked paprika
1grated zest of lemon
salt
to taste
black pepper
freshly ground, to taste
1 Tbspcoconut oil
for cooking
satay sauce
dipping
100gcashew nuts
1garlic clove
200mlcoconut milk
or almond
1 tsphoney
1 Tbsptamari
1 Tbspginger
freshly grated
1 tspthai red curry paste
Instructions
Step 1
Put the chicken cubes in a bowl and add the garlic, ginger, spices, lemon zest and a big pinch of salt and pepper
Step 2
Rub the mix all over the chicken with your hands to completely coat, then set aside in the fridge to marinate for a few hours or overnight if possible

(This marinade is best made in advance to get the most flavour out of the meat

) Heat a small frying pan to a medium-high heat and toast the cashews for a few minutes, shaking the pan to prevent them burning, until golden

Tip out onto a plate and leave to cool

Set aside until you are ready to make the sauce

When you are ready to cook the chicken, place a griddle pan or normal pan on a medium-high heat

Load the chicken breasts onto skewers and pop a tablespoon of coconut oil in the pan

Sear the skewers for 10 minutes, rotating every minute until cooked through

While they are cooking, make the dipping sauce
Step 11
Place the toasted cashews in the blender and blend until broken down, then whiz in the rest of the sauce ingredients for a few minutes until smooth

Transfer to a little serving bowl

Serve the skewers with the dipping sauce and enjoy!
