Instructions
Step 1
Dice all the veggies. In a pan over medium heat, add oil and butter. Add onions, mushrooms and peppers till onions are translucent. Add minced garlic and spinach till fragrant and wilted.
Step 2
In a separate bowl, mix eggs and spices. Once veggies are done pour eggs over veggies and cook till scrambled. Add cheese to melt at the end for 1 or 2 minutes. Serve with oven roasted sweet potato
