Veggie Prep
Step 1
Chop potatoes into chunks

Dice onions

Press garlic

Chop zucchini into 1cm chunks

Chop tomatoes into small chunks

Cut spinach (if using chard, chop the stems too!)

Chop celery (we use the leaves too!)
Instant Pot

Add potatoes with minimum amount of water (2 cups) -- 3 min
Sautee

Sautee onion, garlic, carrot, tomatoes, salt and pepper

Side prep: Boil eggs and chop into small pieces
Main Soup

Add sautee, zucchini, spinach, and celery to big pot with water (can use the potato water) and 2 cups tomato sauce. Bring to a boil

Optional: if making lobbio, you can throw the root of the cilantro to the pot
Finish and Serve

Add in potatoes when veggies are tender. Blend with hand blender

Drizzle in olive oil when serving
