1. Cut pork fat in sinall pieces, fry drain and keep aside after all lard is
released (use this lard to fry meat pieces).
2. Wash & clean the meat and liver add enough water to cove with the salt
and boil till tender (reserve all stock)
3. Remove and cut into small pieces.
4. In a large frying pan put in the lard (above) or oil (if no lard) and fry the meat and liver pieces till brown. Remove and keep aside.
5. In the same pan, fry the sliced onions (do not brown - cook till soft) and add to meat.
6. With one cup water wash out pan and reserve.
7. In a vessel put in the meat and onions fried pork fat pieces, heat well and
stir in the masala and fry for a few minutes. Add the vinegar washing of
stone, stock and pan water, cover dekshi and cook for sometime. Then stir
in the sliced green chillies and ginger. Add more hot water, taste for vinegar and salt, cover and cook on low heat till done.
8. should have good gravy.
