0.75 Cpico de gallo
or salsa
1chipotle chile in adobo sauce
chopped, plus 1-2 T sauce from the can
1 x 14 ozcan pinto beans
drained and rinsed
1.5 Cchicken
shredded
0.25 Ccilantro
chopped
kosher salt
4burrito-size flour tortillas
1.5 Cwhite rice
cooked
1 Cshredded monterey jack cheese
1.33 Cromaine lettuce
shredded

Instructions
Step 1
Heat the veggie oil. Add half of the pico de galio, chopped chipotle and adobo sauce to taste; cook until mixture starts to sizzle, about 2 minutes. Add the beans and 3/4 C water; bring to a low boil, then stir in the chicken and cook until the mixture is slightly thickened, about 2 minutes. Stir in the cilantro and season with salt. Serve in tortillas.
