Instructions

Step 1
Preheat the oven to 325Β°F 10 minutes before baking.
Step 2
Do not grease the baking sheets.
Step 3
Sift the flour with the baking powder.
Step 4
Using an electric mixer, cream the butter until shiny and add the sugar slowly to incorporate well.
Step 5
Stir in the flour in 2 or 3 portions, mixing well after each addition.
Step 6
Turn the dough out onto a lightly floured surface and knead just until the ingredients are incorporated.
Step 7
Be careful to avoid overkneading.
Step 8
Roll the dough into a rectangle of your desired thickness.
Step 9
Prick the dough all over with a fork, then cut it into 2-inch squares.
Step 10
Place the squares on ungreased baking sheets about 12-inch apart.
Step 11
Bake for 18 to 20 minutes, until the cookies are a light golden color.
Step 12
Remove from baking sheets and place on racks to cool.
