Step 1
one-pot soup – melt the butter in it and mix with olive oil to slightly fry until golden colour the finely chopped shallots and the white part of the leeks cut into rings

add seasonings and diced potatoes, pour hot water (about 1 l) and cream. let it boil, cover with a lid and simmer for about 15-20 minutes until potatoes are ready

remove the pot from the heat and make it a puree with a blender

serve with chopped chives and grated grana padano
