Instructions
Preheat the oven to 350°F
Step 1
Set an oven rack in the middle position. Line a baking sheet with parchment paper.
Step 2
In med. bowl, whisk together powdered sugar, kosher salt, cayenne pepper, & water. Add pecans & stir until evenly coated.
Step 3
Transfer pecans to prepared baking sheet, arranging in single layer and evenly spread out (if they are clumped together, they won't cook evenly). Scrape out every last bit of glaze from bowl to drizzle over the nuts.
Step 4
Bake (10-12 min.) until pecans are caramelized with a rich brown color but not burnt. (The nuts around the edges will darken first; watch closely so they don't burn.)
Step 5
Immediately, carefully slide parchment off of hot baking sheet & allow pecans to cool completely on the countertop (this stops the cooking process and prevents the nuts from burning). Once cool, remove pecans from parchment, breaking apart any clusters; store in airtight container (up to 2 wks.)
Step 6
Note: If the nuts are sticky after cooling, that means they are a bit undercooked. Pop them back in the oven for a few minutes and let cool again.
