If you’ve never heard of Rao’s chicken scarpariello, now is the time. This restaurant is so good, they give out their recipes on their website! Makes sense when you find out they’ve been open since 1896. I don’t think they’re worried about the competition. This version is more veggie forward and less pickled pepper focused but if you want the original, go to Rao’s website. Cost of recipe: $20.51

Instructions

Step 1
Preheat oven to 350.
Step 2
Wash and boil the potatoes until soft. Drain and let cool.

In a large sauté pan, heat up the oil over medium high heat.

Salt and pepper the chicken and cook fully. Remove from pan and add in the sausage. Cook until brown and remove from pan.
Step 5
Add the peppers and onion slices to the pan, cook until soft. Add garlic and cook until fragrant.
Step 6
Pour liquid from the pickled peppers jar and the white wine to the pan. Bring to a boil to deglaze.
Step 7
Cut the potatoes in half, lining the bottom of a baking pan. Salt and pepper generously.

Add in the cooked veggies, chicken and sausage.
Step 9
Place the pickled peppers throughout the dish.
Step 10
Pour the wine and brine from the pan, making sure to scrape any leftover bits into the dish.
Step 11
Sprinkle oregano evenly over the entire dish.
Step 12
Bake for 25 minutes to marry all the flavors.
