Ingredients
1 servings
1 teaspoonavocado oil
5 ½ cupsmushrooms baby bella
mini, or shiitake
1clove garlic
minced
3 Tablespoonsspice blend
for flavor, if using in place of meat in a recipe, use spices listed in the recipe
5 ½ cupslentils
cooked, any type of lentils will work
¾ cupwalnuts
soaked in freshly boiled water for at least 10 minutes and drained
Instructions
Step 1
In a medium pan, sauté the mushrooms in avocado oil over medium-high heat for about 10 minutes, stirring frequently. Add in the garlic and spice blend of choice. Remove from heat and let cool.

Step 2
Add the cooked mushrooms, lentils and walnuts to the bowl of a food processor and pulse until you reach a crumbly “ground meat” consistency.
