Instructions

Step 1
Preheat oven to 180. Place onion and eggplant in roasting tray. Lay chicken thighs on top of veggies. Whisk all sauce ingredients together and pour over chicken mix. Bake for 15 mins. Then add tomatoes and olives and cook for a further 30-40 mins. To serve, crumble feta over the top and serve with pita bread
