Baked Potato Bar

Potatoes are rich in vitamins, antioxidants and minerals and a baked potato bar is a fun way to use up leftovers. Choose russet potatoes for baking. This high starch potato cooks up a fluffy potato interior that you just don’t get with waxy varieties of potato like yukon, yellow flesh or red skin potatoes.

Instructions
Step 1
Preheat oven to 350F
Step 2
Wash and gently scrub the potatoes to remove any dirt.
Step 3
Dry the potatoes and prick each one 5-6 times with a fork

Rub each potato lightly with olive oil and sprinkle with salt

Place directly on the oven’s wire rack. Place a baking sheet on the rack below to catch anything that may drip. If you only have one rack in your oven, place the potatoes on a baking sheet lined with a wire rack.
Step 6
Bake for 60 minutes.
Step 7
Check for doneness. The outside skin will be crispity but a gentle squeeze will indicate if the flesh inside is soft and cooked through. Depending on the size of your taters you may need to extend the time another 10-15 minutes.
Step 8
Allow potatoes to rest for 5-10 minutes (baked potatoes hold their heat amazingly well.
Step 9
Slice through the top of each potato and gently squeeze each one to release and fluff up the interior.
Step 10
Top potatoes any way you like. There is a ton of potential in this week’s ingredients and leftovers. Use up what you like to make way for next week’s groceries.
