Ingredients

SPONGE CAKE:
8eggyolks
large
½ cupgranulated sugar
â…“ cupwater
1 Tbspbaking powder
½ tspkosher salt
1 ¾ cupscake flour
sifted
â…“ cupbutter
melted and cooled
¼ tsporange extract
¼ tsplemon extract
8eggwhites
large
1 tspcream of tartar
¾ cupgranulated sugar

Instructions
Step 1
1. Beat @ high speed in mixer bowl until thick. 8 eggyolks, 1=2 cup sugar and 1/3 cup water.
Step 2
2. When you cannit feel the sugar granules from mixture anymore. Decrease mixer speed to LOW. Add baking powder, salt, sifted cake flour, melted and cooled butter, orange and lemon extracts.
Step 3
3. In separate large bowl, beat 8 eggwhites with cream of tartar at HIGH SPEED. Gradually add 3/4 cup granulated sugar and beat until STIFF PEAKS about 4 minutes.
Step 4
4. Fold in yolk mixture into the eggwhite meringue.
Step 5
5. Grease 12 big mamon molds or 20 small mamon molds with softened butter on all sides.
Step 6
6. Pour mamon mixture into greased molds, 3/4 full. This, the msmon will rise high and be soft.
Step 7
7. Bake mamon at 350F for 12 to 15 mins.
Step 8
8. When it's done remove from oven. Place mamon on wire racks. Brush with softened butter. Dip on a plate of sugar and add grated mild cheddar or Edam cheese on top (optional).
