Instructions
Step 1
Start by creaming softened butter and sugar together by hand until the mixture becomes creamy, light, and fluffy.
Step 2
Then, add your eggs one at a time, making sure to beat thoroughly after each addition.
Step 3
Mix in the vanilla extract.
Step 4
In a separate bowl, sift together the flour and baking powder.
Step 5
Gently fold the dry ingredients into the wet mixture.
Step 6
Grease two 8-inch cake pans and line the bottoms with parchment paper. Evenly divide the cake batter between the two pans.
Step 7
Bake the cakes in the preheated oven for about 25 minutes, or until they turn golden.
Step 8
After baking, let the cakes cool in the pans for a few minutes, and then turn them out onto a cooling rack.
Step 9
While waiting for the cakes to cool completely, beat the white cheese (you can also use mascarpone cheese), lemon zest and cream with icing sugar until the mixture becomes smooth and forms soft peaks.
Step 10
To assemble the cake, layer one cake with the cream and strawberry jam, then place the second cake on top and cover with more cream and fresh strawberries.
Step 11
Enjoy!
