Instructions
Step 1
Start pot of boiling water and pre-heat sauté pan to medium-high.
Step 2
Finely chop garlic, reserve with crushed red pepper and tomato paste. Chop basil and set aside separately.
Step 3
Add glug of olive oil to sauté pan, then add tomatoes. Cook for 2 minutes until blistered.
Step 4
Add garlic/crushed red pepper/tomato paste mix to tomatoes, cook 30 seconds until fragrant. Add red wine, cook for 2 minutes.
Step 5
Add Gnocchi to pot of boiling water until they float to the top, about a minute. Remove with slotted spoon, add to sauté pan. Add starchy water to sauté pan to loosen sauce. Add chopped basil at end.
Step 6
Crumble goat cheese over gnocchi. Serve with some rocket dressed with olive oil. Season with ground black pepper.
