Instructions
Step 1
In a small bowl, whisk together chicken broth, balsamic vinegar, olive oil, crushed red pepper flakes, parsley, dried basil, and salt to taste.
Step 2
Place chicken breast into a resealable bag and pour marinade.
Step 3
Seal bag and coat chicken with sauce.
Step 4
Marinate chicken in the fridge for 3 hours.
Step 5
Preheat oven to 350F and coat a baking dish with cooking spray.
Step 6
Arrange chicken into prepared dish and bake covered for 20 minutes.
Step 7
Remove cover and add feta cheese, fresh basil and tomato slices.
Step 8
Continue baking for 10 minutes or until chicken is no longer pink inside and juices run clear.
