Ingredients

5carrots
medium, cut into 3/4-inch chunks
2onions
large, quartered and cut into thick slices
4 ribscelery
cut into 1/2-inch slices
¼ cupcanola oil
1 poundwhite mushrooms
or baby bella
¼ cupflour
1 x 11.2 ozDraught Stout
bottle
3 cupswater
2 tablespoonssoy sauce
2 teaspoonsbrown sugar
packed
½ teaspoondried thyme
¼ teaspoonground black pepper
or to taste
1bay leaf
Instructions
Step 1
In a Dutch oven sauté carrots, onions and celery in oil until they start to brown. Add mushrooms; continue to sauté until carrots begin to soften. Add flour to coat vegetables; stir an additional minute or two.
Step 2
Deglaze pan with Guinness, stirring to loosen any bits from bottom of pan. Add water, soy sauce, brown sugar, thyme, pepper and bay leaf; stir until mixture comes to a slow boil and begins to thicken.
Step 3
Lower heat. Simmer, uncovered, until carrots can be pierced with a fork, about 20-30 minutes. Stir frequently to prevent sticking, adding more water if necessary.
Step 4
Taste for seasoning. Add salt if desired.
