Instructions
Step 1
Remove the skin of your sausages and crumble the meat with your hands or fork.
Step 2
In a pan over medium low heat, add a drop of olive oil and your crumbled raw sausages.
Step 3
Sizzle for a about 5 mins or until they start to become brown.
Step 4
Add white wine and cook for 5 more mins, stirring occasionally.
Step 5
Remove your cooked sausage and set aside.
Step 6
In the same pan, sprinkle some more olive oil (or you can use the fat juices of your cooked sausage instead), add chopped onion and cook for 2 mins.
Step 7
Add sliced mushrooms and cook for about 4/5 mins then add your tomato passata and cook for 15 more mins.
Step 8
Season with salt and pepper.
Step 9
In the meantime, boil your pasta in some salted water or until al dente.
Step 10
After 15 mins, add your cooked sausages into your sauce, heavy cream and cook for a couple more mins.
Step 11
Add chopped parsley, your boiled pasta and toss well over the heat to combine all the flavours together along with a couple spoons of pasta water.
Step 12
Turn heat off, add grated Parmigiano and stir one last time.
Step 13
Serve with some chopped parsley on top. Buon appetito!
