Ingredients

2 tablespoonssunflower oil
1 ¼ cupslong-grain rice
1carrot
peeled and chopped
1garlic clove
choppee
1 teaspoonpaprika
1 pinchground cloves
1 pinchchili powder
1 teaspooncumin seeds
1 tablespoondried oregano
2bay leaves
3 stalkscelery
finely sliced
celery leaves
set aside
14 ozcan kidney beans
ned, drained
1 tablespoontomato paste
1 teaspoonsalt
2 cupsvegetable stock
4scallions
thinly sliced
Instructions
Step 1
Heat the oil in a Dutch oven.
Step 2
Sauté all spices, garlic, rice, bay leaves, 2 scallions, carrot, celery stalk.
Step 3
Add the broth and the salt. Then cook on low heat for 30 minutes.
Step 4
After 25 minutes, Add the beans, celery leaves (snipped), tomato paste, and the other 2 scallions.
