Step 1
From the eggplant cut 3 slices of equal size and thickness
Step 2
Heat the oil in the pan. Over high heat, add the eggplant and season. After 2-3min turn and season again

Cut the tomato and parmesan into thick pieces and chop the cashews
Step 4
Spread the first eggplant slice with hummus. Then add 1 parmesan and 1 tomato slice
Step 5
Top it with the second eggplant slice and repeat step 4
Step 6
Finish with the last eggplant slice
