Algerian Beef Bourek (Beef Egg Rolls)

Instructions

Step 1
Add oil to frying pan, chop onion into small diced pieces and add to hot oil, allow onions to cook until translucent and browning begins.
Step 2
Once onions soften and begin to caramelize, add 3 garlic cloves crushed, 2 small potatoes peeled and diced really small and mix well until potatoes begin to cook.
Step 3
Add 1/2 teaspoon ras el hanout (or your favorite spice blend), 1 teaspooon paprika, 2 tablespoons dried oregano, 2 tablespoons finely chopped parsley and cilantro, salt and pepper to taste preference (start with 1 teaspoon of salt and taste if more is needed), and cayenne pepper if you like spice.
Step 4
Add 1 lb ground beef and cook it through.
Step 5
Arrange spring roll sheets with a side of water to add to the edges to seal. Place spring roll sheet on work surface in a diamond shape, add water to the edges of the sheet.
Step 6
Spread a teaspoon or more of cream cheese of choice (philadelphia cream cheese, puk cheese, laughing cow cheese, kiri) to each sheet, followed by a heaping spoonful of the beef filling, and fold like a burrito.
Step 7
Ensure the edges are wet to seal the "burrito" properly to avoid leaking while frying.
Step 8
Heat oil to wooden spoon test* or 350-375F, add bourek once oil is hot enough and cook until golden.
Step 9
Serve hot with lemon wedges and garnish with fresh chopped parsley/cilantro.
Step 10
*Wooden Spoon Test: To test if the oil is hot enough when frying foods, place wooden spoon into hot oil, if it begins to bubble around the spoon immediately, the oil is ready, if it takes time, allow oil to heat for a bit longer.
