Ingredients
5 servings
1.5 lbboneless skinless chicken breasts
1lime
large, juiced
1 teaspoonground cumin
1 teaspoonsmoked paprika
¼ teaspoonsea salt
¼ teaspoonground black pepper
15 ozcrushed tomatoes
and juice
15 ozcan black beans
rinsed and drained
1 ½ cupscorn
frozen, organic
1 cupchicken bone broth
4 ozgreen chiles
diced
1yellow onion
small, diced
2 clovesfresh garlic
minced
Instructions
Step 1
All all ingredients to a crockpot.
Step 2
Cook on low for 6-8 hours or high for 4-6 hours.
Step 3
Once chicken is cooked, remove from crockpot and shred it using forks. Return chicken to the slow cooker.
Step 4
Divide the Mexican chicken among 5 bowls and top with your favorite toppings! (Cilantro, avocados, jalapenos, green onions, shredded cheese, etc.)
