Instructions
Step 1
Place the red potatoes, garlic, broth, salt, and pepper into the pressure cooker.
Step 2
Close the lid and set to sealing, then cook on high pressure for 12 minutes. When it is done, quick release the pressure.
Step 3
Open the lid and add butter, and cream cheese. Close the lid but do not cook. Let it sit for 3-5 minutes to heat and soften the cream cheese and butter.
Step 4
Remove the lid and use a potato masher to mash to your preferred consistency.
Step 5
NOTES: to double, double all ingredients except the chicken broth. Use 3/4 cup of broth. Leftovers can be kept in an airtight container int he fridge for up to a week or in the freezer for up to 3 months.
