Chocolate Chip Cookies

Adapted from the chocolate chip cookie portion of this Slutty Brownie recipe: https://preppykitchen.com/slutty-brownies/ They have a little bit of quick cooking oats which I thought I would hate but I think it’s what gives them their fluffiness.

Instructions

Step 1
1. Add the flour, baking powder, baking soda and salt to a bowl and whisk to combine then set aside.
Step 2
2. Cream the room temperature butter with the white and brown sugars. Beat until light and fluffy then scrape the bowl down and beat in the egg and vanilla.
Step 3
3. Add the flour mixture into the butter and give it a little mix with your spatula to get things started. Then mix on low until almost combined.
Step 4
4. Fold in the oats and chocolate chips, mixing until just combined.
Step 5
Refrigerate the dough for about 30 minutes. Scoop using a 1 tablespoon scoop. Place dough balls on a rimmed baking sheet, and freeze until firm, about 1 hour.
Step 6
Bake dough from frozen at 350° until lightly browned, 10 to 12 minutes. Sprinkle with flaky sea salt, if desired.
