Instructions
Step 1
Boil the kettle and add the boiling water to the stock, creamed coconut and tomato paste in a mixing jug and stir until all dissolved.
Step 2
Heat oil in a pan and add the onion and cumin seeds. Cook until slightly translucent (~3 mins) then add in the cherry tomatoes, ginger, garlic and coriander powder and cook for a further minute.
Step 3
Add the red lentils to the pan and mix it all together well. Allow to cook for 1 minute and then add the stock mix and the turmeric. Stir the contents of the pan then cover and leave to simmer for 20 minutes, stirring regularly to prevent the lentils stick and burning on the bottom of the pan.
Step 4
After 20 minutes, the lentils should have broken down and the dal nice and creamy. Serve with rice and flat bread.
