Baked Oat Bars
As a new mom, you might like this easy recipe. It takes me less than 5 minutes to put together: 3 mashed ripe bananas, 2 cups regular rolled oats (not quick), 2 tsp vanilla, cinnamon to taste (1/2 tsp?). Mix together, stir in one cup of frozen blueberries and 1/3 cup chopped walnuts. Press into a 9x9 parchment lined baking dish, bake at 350 for 40 minutes. It's done when the center top is firm. A tablespoon of chia seed will help this stay super moist for days. You can also add ground flaxseed. I often substitute mashed ripe peaches or freshly made blender applesauce for the bananas. Estimate how much you will need. This is a very forgiving recipe, meaning don't sweat the proportions too much. Make it with bananas the first time and then you'll see how much of the substitute items you might need. We had a huge crop of the sweetest butternut squash last year so I often use squash in place of the bananas with pumpkin pie spices. So yummy and easy! Cut into squares while still warm. This travels well, and is an easy, grab and go snack. It also keeps well in the fridge or freezer. Make up a batch and stash it for when you get the hungries.
