Instructions

Step 1
For the pork: Peel and chop the onion. Crush the garlic.
Step 2
Place pork in a large covered pot (slow cooker inserts work really well). In a medium bowl, whisk vinegar, salt, onion, garlic and honey. Pour over pork roast. Add bay leaves and filtered water to cover.
Step 3
Place pot in refrigerator 8 hours or overnight. NOTE: it is better to under-brine than over-brine. If overnight will be longer than 8 hours for you, start the brine early in the morning instead.
Step 4
After brining, drain roast and discard brine. Rinse roast and pat dry. Set aside.
Step 5
For the rub: Preheat oven to 225F. Process thyme, salt and garlic in a food processor for 30 seconds.
Step 6
Place brined pork in a roasting pan. Coat entire mixture. Roast, fat cap up, until internal temperature is 145F, apprx 3 hours. Allow to rest 10-20 minutes before carving. Serve and enjoy!
