3 Tbspbalsamic vinegar
1 Tbspdijon mustard
1garlic clove

salt
to taste
black pepper
freshly ground, to taste
12 oziceberg lettuce
finely chopped
12 ozromaine
hearts, finely chopped
2 ozwatercress
finely chopped
0.5 lbred beets
roasted and finely diced
0.5 lbaged Cheddar cheese
finely diced
0.5 lbapplewood-smoked bacon
cooked and finely chopped
3eggs
hard-boiled, peeled and finely chopped
0.5 lbchicken breast
grilled, finely diced
1vine-ripened tomatoes
large, peeled, seeded and diced
1avocados
peeled and sliced
Instructions
Step 1
Combine first 5 ingredients in a measuring cup; whisk to combine.
Step 2
Combine iceberg, romaine and watercress. Divide among 4 large salad bowls. Arrange beets, cheese, bacon, eggs, chicken and tomatoes artfully on each serving. Drizzle with dressing. Top with avocado and serve with extra dressing on the side.
