Lentil Banana Bread with Chocolate Chips

This moist banana bread is a tradition in my household but with the added lentils it makes it healthier with more fibre, protein, B vitamins and iron - a good all rounder for all the family to enjoy. They will never know lentils are there - unless you tell them!

Instructions
Step 1
Preheat oven to 175C.
Step 2
Grease a large loaf tin.
Step 3
Add to a food processor the butter and sugar and blend until combined.
Step 4
Add lentils, egg, mashed bananas, keffir and vanilla until the batter is well mixed.
Step 5
Add the flour, baking powder, salt, bicarbonate of soda until well combined.
Step 6
Stir in the chocolate chips, sunflower seeds and chia seeds.
Step 7
Place batter into greased loaf tin and bake at 175C for 55-60 minutes until a toothpick or knife comes out clean.
Step 8
Leave to cool on a wire rack for 20 minutes before loosening the banana bread with a knife around the edges of the loaf tin. Finish cooling on the rack.
