Step 1
Melt butter or margarine in a large soup pot over low heat. Add spinach, onion, garlic, and pepper to taste. Stir well to coat spinach. Cover and cook for 15 minutes, stirring occasionally until spinach is wilted and has released its liquid.
Step 2
Add water. Raise heat to high. Cover and bring to a boil; then reduce heat to medium-low. Continue cooking, covered, at a medium boil for 30 minutes, stirring occasionally. Stir orzo into boiling soup. Raise heat to medium-high. Continue cooking, uncovered, at a medium to rapid boil for 10 minutes, stirring frequently, until orzo is tender and soup thickens.
Step 3
Taste for seasonings. Serve with Romano cheese and additional black pepper on top, if desired. Serves 6.
