This was one of my favorite comfort foods as a kid that my mother would cook for the family. Now that I am an adult with self-imposed dietary restrictions; I have modified her recipe to suit my gluten free and dairy free diet.

Instructions
Step 1
Bring a container of water to a boil. Add pasta and cook until tender. Drain.
Step 2
Chop onion into small diced chunks. Chop garlic cloves into small pieces.
Step 3
Saute onions in pan with olive oil. Allow to carmelize. Set aside.
Step 4
Cook ground beef in pan until meat is well done. Lower heat.
Step 5
Add goat cheese to prepared meat in pan and stir. Add ketchup. Stir in onions. Season with salt and pepper. Add flax seed for a dash of health and to act as a thickening agent. Add raw garlic and stir well. Allow to simmer 2-3 minutes over low heat.
Step 6
Pour sauce over cooked pasta. Toss before serving if full coating of noodles is desired. Or else serve sauce over noodles.
Step 7
(Optional Additions) Add more salt and pepper as needed. Add chopped parsley as a garnish. Add sauteed mushrooms.
Step 8
(Substitutions) Substitute riced cauliflower for pasta for a lower carbohydrate option. Use tomato paste in place of ketchup. Use regular pasta for the non gluten free option. Use sour cream in place of goat cheese for a non dairy free option. Garlic powder can be used as garlic substitute but raw garlic will give the dish a robust flavor and greater health benefits.
