1.25 lbschicken thighs
boneless/skinless
2 TbspRanch Seasoning
6slices bacon
8 ozcream cheese
room temp
1 cupsour cream
2 Tbspmayo
1 Tbspsoy sauce
2 tspgarlic powder
½ tspblack pepper
½ tspsalt
90gspinach
chopped SMALL
18 ozbroccoli florets
steamed and squeezed of excess water
10 ozriced cauliflower
steamed and squeezed of excess water
1 cupmozzarella cheese shredded
1 cupcheddar cheese shredded
Instructions
Step 1
1. Preheat the oven to 400F.
Step 2
2. In a large skillet cook the bacon until fully cooked and crispy. Set the bacon aside.
Step 3
3. Take the chicken and sprinkle it with 1⁄2 of the ranch seasoning. Add the chicken to the skillet and sear over medium high heat for 6 mins per side. Once cooked through remove the chicken and let cool.

4. In a large bowl mix together the cream cheese, mozzarella cheese, sour cream, mayo, soy sauce, garlic powder, black pepper, remaining ranch seasoning, and salt. Once smooth add in the spinach and stir.
Step 5
5. Take the chicken and bacon and chop it into small pieces. Add that to the bowl and stir.
Step 6
6. In a large casserole dish add the riced cauliflower to the bottom and the broccoli florets to the top of that. Spread the mixture in the bowl on top. Cover with foil and bake for 15 min
Step 7
7. Sprinkle the remaining cheese and return the casserole to the oven uncovered for 5 min
