Instructions
Step 1
Roast the hazel nuts at 160°C for 25 minutes
Step 2
Peel the skin off the hazelnuts, this can be done easiest by rolling them around in your hands or a tea towel
Step 3
Create an amber caramel with the caster sugat by heating in a pan on the hob
Step 4
Pour the caramel onto baking parchment lined metal tray to quickly cool the caramel before it burns
Step 5
When the caramel solidifies break it into shards and create a praline paste in a food processor, this will take several minutes and put to the side
Step 6
Melt the chocolate in a microwave or bain marie
Step 7
Grind the remaining hazelnuts with the icing sugar until it becomes butter like, this will take several minutes
Step 8
Combine all the ingredients in the food processor and grind until smooth
