Turkey and Bacon Stuffed Mini Peppers

I love ground turkey replacing a heavy beef flavor but this recipe isbgreatvwith whatever ground meat you prefer!! Preheat oven to 400 degrees.

Instructions

Step 1
Cook bacon until crispy and able to be crumbled. Drain and set aside on a paper towel.
Step 2
Use bacon drippings OR Warm EVOO in the skillet, then add turkey and brown. While browning add salt and pepper to taste. I use italian seasoning or something spicy for flavor, and add garlic to meat about halfway through the browning process.
Step 3
Once meat is browned add cream cheese and stir until melted and combined. Fold in crumbled bacon.
Step 4
While meat and cheese are combining, cut pepper in half and clean out seeds.
Step 5
Stuff pepper halves with mixture and then top with shredded cheese. Place in oven for 15 minutes.
Step 6
NOTE: We like our peppers chrispy and fairly raw, if you like them softer prebake them with a little EVOO for about 10 minutes before stuffing them.
