Instructions
Step 1
Belnd flours in a large mixing bowl. Add shortening (1/3 cup plus 1 Tbsp), blend with pastry blender until mixture resembles coarse crumbs.
Step 2
Add 2 or 3 Tbsp ice cold water, one tablespoon at a time, briefly blending with a large fork after each addition. (The less water used the flakier the crust. Use just enough to make the dough adhere. Form into a ball.
Step 3
Flour a pastry cloth and rolling pin. Flatten dough ball smashing sides. Roll evenly into a pie sized piece. Place pie plate on top of the dough circle and turn pastry cloth over so the dough falls into the pie plate. Pour in filling. Crimp edges. Place thin strips of foil around the perimeter to prevent burning.
