I've got a flavourful treat for you that's going to knock your socks off - the Avo & Salmon Filo Snack! 😋 This recipe is all about the layers of flavours and textures, starting with crispy filo pastry wrapped around cannoli moulds. Then comes the smooth, creamy filling made from fresh avocado, lime juice, olive oil, salt, and pepper, with a zesty tang. But that's not all - we add smoked salmon too, creating a mouth-watering savoury and smoky contrast to the creaminess of the avocado. 🤤 This snack is perfect for impressing your guests at a party or indulging in a sophisticated afternoon treat

Instructions

Step 1
1. Preheat your oven to 170C (fan).

2. Lay one filo sheet on a flat surface and brush it with melted butter. Place the second sheet on top and brush it with more melted butter. Finally, place the third sheet on top and brush it again with melted butter.

3. Cut the filo pastry into 9x9cm squares.
Step 4
4. Place a cannoli tube mould diagonally in the centre of each square and wrap the edges so they cross each other in the middle. Brush with more butter to secure the middle and place them on a baking tray lined with parchment, cross side down.

5. Bake for 5-7 minutes or until golden. When they're ready, remove them from the oven and allow them to cool.

6. Meanwhile, prepare the filling by combining the avocados, lime juice, olive oil, salt, and pepper in a bowl. Mash the mixture until it is smooth and transfer it to a piping bag.

7. Once the cannoli tube moulds have been removed, fill the filo crusts with the smashed avocado mixture. Add a bit of smoked salmon to both sides and garnish with chopped chives.
