Cupcakes inspired by Trader Joe’s peanut butter cups! It has a peanut butter cream cheese frosting and a PB cup inside! It has no eggs, but it does have mayonnaise- which made all the difference with the moisture with these babies.

Instructions

Step 1
Preheat oven to 350º
Step 2
Sift dry ingredients (flour, cocoa powder, salt, baking soda, sugar) into a large mixing bowl. Add mayonnaise, vanilla, and water. Mix together until combined.
Step 3
Pour batter into an oiled cupcake tin.
Step 4
Cut peanut butter cups in half and add them to each tin.
Step 5
Bake for around 15 minutes, or until you can stick a toothpick in without batter sticking to it.
Step 6
While it's baking, create your frosting. Combine powdered sugar, peanut butter, and cream cheese in a bowl and mix until smooth. Put the frosting in a large plastic bag and cut a corner to frost the cupcakes.
