Instructions

Step 1
Begin with making the mayonnaise. Separate the eggs yolks and place into a bowl. Stir well and keep stirring whilst slowly adding the oil. It should quickly begin to thicken and emulsify. Halfway through pouring the oil add the mustard, smoked paprika, vinegar and squeeze in the lemon wedge. Keeping stirring and adding the oil until you have a nice thick mayonnaise.
Step 2
Finish by adding the chives and seasoning to taste with salt and pepper. Cover and leave in the fridge.
Step 3
Bring a large sauce pan of water up to boil and add the lobster (or you can use just a lobster tail if you don't want to buy a whole lobster). Depending on the size, boil for 6-8 minutes. You want to cook it almost all the way, but not quite.
Step 4
Remove from the pot and place in an ice bucket.
Step 5
Whilst it cools down prepare the ingredients for the butter. Finally chop the celery, garlic and grate the lemon zest.
Step 6
Then twist the tail off the lobster and using scissors cut down each side. Remove from the shell and chop into bite size pieces.
Step 7
Then add the butter and the rest of the ingredients to a sauce pan and melt. Once bubbling, add the lobster and cook through for 2 minutes.
Step 8
Spread both sides of the rolls with butter and toast evenly.
Step 9
Remove the lobster from the pan and add to a bowl. Top with 2 tbsp of the mayonnaise and mix through.
Step 10
Then slice the rolls open, spread with the mayonnaise and spoon in the lobster.
Step 11
Garnish with chives and enjoy!
