Instructions
Beurre Blanc
Step 1
Finely chop the shallots before combining with the vinegar, lemon constituents, and white wine and bringing to the boil

Reduce until about 2 tbsp remain
Step 3
Add the water and bring the mixture back to the boil until you have 1 tbsp
Step 4
Reduce the heat and whisk in the butter, one cube at a time, until the sauce pales and thickens

Take off the heat and season to taste before filtering

Preheat the oven to 180°C (gas mark 4) and heat the butter and oil in a pan
Step 7
When the butter stops foaming, add the fish fillets and fry until the skin is crisp
Step 8
Turn and fry until the flesh is also golden brown
Step 9
If appropriate, transfer to the oven for 4-5 minutes until just cooked
Step 10
While the fish cooks, reheat the buerre blanc
