Ingredients
4 servings
1zest of orange
grated
150mlvegetable stock
1 tablespoonagave nectar
or honey
3 tablespoonslime juice
2 tablespoonsolive oil
2garlic cloves
crushed
1 tablespoonground cumin
½ tablespoonground cinnamon
½ tablespoonallspice
½ tablespoonsmoked paprika
½ teaspoonfine sea salt
¾ teaspooncayenne pepper
¾ teaspoonturmeric
freshly ground black pepper
500gfirm tofu
pressed
spring onions
finely sliced, scallions, to serve, optional
Instructions
Step 1
Heat the oven to 220°C (425°F/Gas 7).
Step 2
Whisk together all the ingredients except the tofu and spring onions.
Step 3
Cut the pressed tofu into 16 equal pieces.
Step 4
Put in a single layer in a shallow ovenproof dish.
Step 5
Cover with the marinade and gently turn each piece over to coat on all sides.
Step 6
Roast for 20 minutes, then flip the tofu over and cook for 20 minutes more.
Step 7
A lot of the marinade will have been absorbed.
Step 8
Remove the tofu pieces to a serving plate and sprinkle with the spring onions (if using).
Step 9
Serve immediately.
