4 ballmozzarella
100gbutter
8 clovesgarlic
2 Tbspparsley
finely chopped
½ tspsalt
3black pepper

2 Tbspgrated parmesan
The Coating

The Dough
Step 1
Mix the yeast with the milk and sugar then stir and let sit for 10 minutes
Step 2
Mix the salt into the flour and pour in the milk mix and combine, then knead for 10 minutes
Step 3
Leave at room temp in a bowl covered with cling film for 1-2 hours til doubled in size
Step 4
Pull out the bowl and divide into 16 even pieces and squash each into a disk, and let rise on a floured surface for 1-2 hours until doubled in size again
The Doughnuts
Step 5
Drain the liquid from the mozzarella balls, cut each in half, then squeeze each piece with kitchen roll to remove as much moisture as possible. Let sit in the open air for at least 30 minutes then squeeze again to remove more moisture
Step 6
Put the butter in a bowl for 20 seconds to soften and crush in the garlic and add the parsley parmesan salt and pepper
Step 7
Mix the coating in a large bowl ready for the doughnuts
Step 8
Roll each disk of dough to 1cm wider than the mozzarella halves
Step 9
Lay a spoonful of garlic butter and a piece of mozzarella on each, wet the edges with a brush or your finger and lay another disk of dough on top, squeeze out all the air and press around the sides to seal
Step 10
Heat a pan of oil to 160C and fry the doughnuts in batches for 3-4 minutes a side til deep golden brown
Step 11
Take out from the oil and immediately toss in the coating mix, then serve and enjoy!
