Instructions
Step 1
Place racks in the upper and lower thirds of your oven and preheat your oven to 200 degrees F. Line two baking sheets with parchment paper or a silpat mat.
Step 2
Wash the apples. With an apple corer, core the apples (you can also skip this step if you don't mind a few seeds in the chips). With a mandolin (recommended) or a very sharp knife, slice the apples horizontally into 1/8 inch-thick rounds
Step 3
Arrange the apples in a single layer on the prepared baking sheets. Sprinkle with cinnamon. Bake for 2-3 hours in the upper and lower thirds of the oven, switching pans halfway through baking time. Remove from oven, allow to cool. Apple chips will crisp as they cool.
